Because cell structures remain largely intact, vitamins, minerals and colour are better preserved compared to normal drying. That’s why sensitive ingredients like vaccines, antibiotics and plasma are commonly freeze-dried in pharmaceutical labs.
When water is added back, the product quickly rehydrates, regaining close-to-fresh taste and texture – with a shelf life that can extend many months if stored correctly.

The cooked dish is frozen at −50°C, converting all water content to ice crystals.
Then a vacuum is created to convert these ice crystals directly into water vapor.

The resulting content is dry, porous, sponge-like that allows easy rehydration later.
This dry content is sealed in a special triple-layer pack with a shelf life of up to 8 months.
